This grass-fed New Zealand silverside is cut from the rear section of the animal, taken from the upper hind leg. The beef is cured in a seasoned brine, a process that gently breaks down the fibres and delivers a tender, succulent result once cooked.
Before cooking, rinse the meat under cold water to reduce surface salt. Corned beef is best cooked low and slow, fully covered in a well-flavoured stock, making it ideal for hearty winter meals. Enjoy it the classic way with mashed potatoes and cabbage, or pair it with roasted vegetables such as glazed carrots, garlic green beans, or chargrilled Brussels sprouts.
